For us, cornbread isn't just a rich, buttery, and delicious side; it's full of childhood nostalgia and family memories. Recently, we put our own spin on the classic cornbread. We've found that simple, natural ingredients can taste every bit as comforting as the classics—just lighter, cleaner, and full of the kind of nourishment that keeps you feeling good long after the last bite.
This version is our go-to companion for hearty soups, stews, and chili nights at the ranch. It’s golden, tender, and subtly sweet without oil, butter, or refined flour.
Whole-Food Plant-Based Cornbread
Prep time: 10 min Cook time: 25–30 min Servings: 10
Ingredients
1 cup oat flour
1 cup medium-grind cornmeal
2 tablespoons pure maple syrup
1 tablespoon baking powder
½ teaspoon salt
2 tablespoons ground flaxseed + 6 tablespoons water (let sit 5 minutes to gel)
1¼ cups water or unsweetened plant milk
1 tablespoon apple cider vinegar
Directions
Preheat oven to 375°F and place a cast-iron skillet inside to warm while you mix.
In a large bowl, combine oat flour, cornmeal, baking powder, and salt.
In a separate bowl, whisk together the flax “egg,” maple syrup, water (or plant milk), and vinegar until smooth.
Pour wet ingredients into dry and stir until just combined — the batter should be thick but pourable. Add a splash of water if needed.
Carefully remove the hot skillet, dust lightly with cornmeal to prevent sticking, and pour in the batter. Spread evenly.
Bake 25–30 minutes, or until golden and a toothpick comes out clean.
Cool for 10 minutes before slicing. Serve warm with soup, chili, or a drizzle of maple.
