Apple Cinnamon Chia Pudding with Pumpkin Bread | Healthy WFPB Breakfast Recipe

Breakfast doesn’t always have to be predictable. Many of us fall into routines—like reaching for the same avocado toast morning after morning. While there’s nothing wrong with a favorite, sometimes the body craves something new, nourishing, and seasonal. That’s where this fall-inspired Apple Cinnamon Chia Pudding comes in, topped with crumbled wholesome pumpkin bread for the ultimate cozy start to the day.

Chia seeds are tiny nutritional powerhouses, rich in omega-3 fatty acids, fiber, antioxidants, and minerals like calcium and magnesium. They also provide a steady energy boost thanks to their balance of protein and healthy fats. To take this pudding up a notch, flaxseeds were added for extra texture and heart-healthy lignans, along with a scoop of plant-based protein powder for flavor and fullness. The best part? This recipe is 100% WFPB (whole food, plant-based) and dairy-free.

The pudding is infused with warm cinnamon and apple, then layered parfait-style with tender chunks of pumpkin bread. The result is a sweet-spiced harmony: creamy chia pudding with hints of apple pie, paired with moist, fragrant pumpkin bread that crumbles perfectly into each bite. It’s a wholesome breakfast that feels like dessert but fuels like a balanced meal.

Apple Cinnamon Chia Pudding with Pumpkin Bread:

Ingredients

  • 3 tbsp chia seeds (or 2 tbsp chia + 1 tbsp ground flax for smoother texture)

  • ½ cup unsweetened almond milk (or any plant-based milk or even water)

  • 1 scoop vanilla protein powder (I used plant-based)

  • ½ apple, diced

  • ½ tsp cinnamon

  • ½ tsp maple syrup (optional, to taste)

  • 1 slice wholesome pumpkin bread, crumbled (recipe here: Pumpkin Bread)

Instructions

  1. In a jar or bowl, combine chia seeds, flax, almond milk, protein powder, cinnamon, and maple syrup. Stir well.

  2. Let the mixture rest for 5 minutes, stir again, then refrigerate for at least 2 hours or overnight.

  3. Before serving, sauté or microwave the diced apple with a dash of cinnamon for a warm topping (optional).

  4. To assemble, layer the chia pudding with the apple mixture, then top with crumbled pumpkin bread.

Tips for the Perfect Pudding:

  • Stir the chia mixture twice in the first 10 minutes to prevent clumping.

  • For a creamier texture, blend the pudding before chilling.

  • Try pears or peaches in place of apple for seasonal variations.

  • Add a sprinkle of toasted walnuts or pecans for crunch.

This breakfast is more than just a treat—it’s a nutrient-packed, plant-based way to start the morning with comfort and energy. Perfect for slow autumn mornings, or anytime a little cozy indulgence is needed.
